The grapes must meet special requirements and are structured according to must weight:
– Spätlese (at least 19° KMW)
– Auslese (at least 21° KMW)
– Strohwein, Eiswein, Beerenauslese (each at least 25° KMW)
– Ruster Ausbruch (at least 30° KMW)
– Trockenbeerenauslese (at least 30° KMW)

The residual sweetness of predicate wines may only be obtained by stopping fermentation or by interrupting fermentation, but not by sweet reserve.
